Cashews are a sophisticated nut - ideal for so many things, from unbelievable raw desserts to a light pre-dinner snack. They are lower in fat than other nuts, and high in minerals, fibre and calories (which is good, because it means you don't need to eat many to feel full!)
Our cashews come from Vietnam - as do almost all the organic cashews you will find in Australia. They have not been treated in any way on arrival into Australia.

The Activation Process
Although even raw nuts are one of Nature´s finest high protein vegetarian and vegan foods, in order to be truly functional and a superfood, they need some gentle treatment to make them digestible.
Nuts are the seeds of plants and they contain a cocktail of natural chemicals, put there by the parent plant to prevent them from rotting on the forest floor or being eaten. These natural chemicals make the nuts indigestible to our systems, and therefore effectively toxic. The main ones which affect us as consumers are phytic acid and enzyme inhibitors.
